Ingredients
  

1 ½ cups all-purpose flour

½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 large lemon (zested and juiced)

½ cup buttermilk

1/3 cup vegetable oil

1 large egg

1 cup fresh blueberries (you can also use frozen)

Optional: 2 tablespoons coarse sugar for topping

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

      Combine Wet Ingredients: In another bowl, mix the buttermilk, vegetable oil, egg, lemon zest, and lemon juice until well blended.

        Combine Mixture: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

          Fold in Blueberries: Gently fold the fresh blueberries into the batter, ensuring they are evenly distributed.

            Fill Muffin Cups: Scoop the batter into the prepared muffin tin, filling each cup about ¾ full. If desired, sprinkle the coarse sugar on top for added sweetness and a nice crunch.

              Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
