1 pound fresh salmon fillet, skin removed and cut into bite-sized pieces

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs, beaten

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon paprika

¼ teaspoon garlic powder

Oil for frying

Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust based on spice preference)

1 teaspoon lime juice

Green onions, chopped (for garnish)

Prep the Ingredients: Start by cutting the salmon fillet into bite-sized pieces. Set aside. Prepare three shallow bowls: one with the panko breadcrumbs, one with flour combined with salt, pepper, paprika, and garlic powder, and the last with the beaten eggs.

    Breading Process: Dip each salmon piece first in the flour mixture, ensuring it's fully coated. Next, dip it into the beaten eggs, and finally coat it with panko breadcrumbs, pressing gently to adhere. Repeat until all pieces are breaded.

      Heat the Oil: In a large skillet, add enough oil to cover the bottom (about ½ inch deep) and heat over medium-high heat until hot but not smoking.
