4 boneless, skinless chicken breasts

1/4 cup Dijon mustard

1/4 cup honey

2 tablespoons olive oil

1 tablespoon apple cider vinegar

3 cloves garlic, minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Preheat the oven to 375°F (190°C). Grease a baking dish with a bit of cooking spray or olive oil to prevent sticking.

    Prepare the marinade: In a medium bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, minced garlic, thyme, salt, and pepper until well combined.

      Marinate the chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
