Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a medium bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. Whisk together until well mixed.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3-5 minutes).

Add Eggs and Bananas: Add the eggs one at a time, beating well after each addition. Mix in the mashed bananas and vanilla extract.

Combine Ingredients: Gradually add the dry ingredients to the banana mixture alternately with buttermilk, starting and ending with the flour mixture. Mix until just combined. Fold in the chocolate chips.

Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Make the Ganache: In a small saucepan over medium heat, heat the heavy cream until it just begins to simmer. Remove from heat and add chocolate chips, stirring until melted and smooth. Let it cool down to room temperature.

Prepare the Banana Frosting: In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar, mixing until well combined. Mix in the mashed bananas, vanilla extract, and lemon juice until the frosting is smooth and fluffy.

Assemble the Cake: Place one layer of the cake on a serving plate. Spread half of the banana frosting on top. Place the second layer on top and spread the remaining frosting over the top and sides of the cake.

Drizzle Ganache: Pour the chocolate ganache over the top of the frosted cake, allowing it to drip down the sides.

Garnish: Decorate with chocolate shavings and fresh banana slices for added flair.

Chill: Allow the cake to set in the refrigerator for about 30 minutes before slicing and serving.
