Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Mix Dry Ingredients: In a medium bowl, combine the flour, baking powder, baking soda, and salt. Whisk together to combine.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Flavorings: Add the eggs, one at a time, mixing well after each addition. Then mix in the lemon zest, vanilla extract, and lemon juice until well combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture alternately with the milk, starting and ending with the flour mixture. Stir until just combined; do not overmix.

Bake the Cake: Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Prepare the Lemon Syrup: While the cake is baking, make the lemon syrup. In a small saucepan over medium heat, combine the sugar, lemon juice, and lemon zest. Stir until the sugar dissolves completely, then simmer for 2-3 minutes until slightly thickened. Remove from heat and set aside.

Soak the Cake: Once the cake is done baking, allow it to cool in the pan for 10 minutes. Then, remove it from the pan and place it on a wire rack. Poke holes all over the cake with a skewer and pour the lemon syrup over it, allowing it to soak in.

Make the Lemon Glaze: In a small bowl, whisk together the powdered sugar, lemon juice, and optional lemon zest until smooth and pourable. Adjust with more lemon juice or sugar as needed.

Glaze the Cake: Drizzle the lemon glaze over the cooled cake, letting it drip down the sides for a beautiful finish.

Garnish and Serve: Top with fresh berries, mint leaves, and additional lemon zest for an elegant presentation. Let the cake sit for at least 30 minutes before slicing to allow the glaze to set.
