Ingredients

1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, finely chopped

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon smoked paprika

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 cup tomato sauce

1 tablespoon brown sugar

Salt and pepper, to taste

4 hamburger buns

Fresh parsley or green onions, for garnish

Instructions

Sauté the Veggies: In a large skillet, heat olive oil over medium heat. Add the chopped onion and red bell pepper, and sauté for about 5 minutes, or until soft. Stir in the minced garlic and cook for an additional minute until fragrant.

Cook the Chicken: Add the ground chicken to the skillet. Using a spatula, break the meat apart and cook, stirring frequently, for about 7-10 minutes or until browned and fully cooked through. Drain any excess fat if necessary.

Add Seasoning: Sprinkle in the Cajun seasoning and smoked paprika, stirring well to combine. Cook for 2-3 minutes, allowing the spices to infuse the chicken.

Create the Sauce: Pour in the Worcestershire sauce, Dijon mustard, tomato sauce, and brown sugar. Stir everything together. Bring the mixture to a simmer and let it cook for another 5-7 minutes, allowing the flavors to meld.

Taste and Adjust: Season with salt and pepper to your taste. If you prefer a spicier kick, feel free to add a little hot sauce at this stage.

Toast the Buns: While the chicken mixture is simmering, toast the hamburger buns in the oven or on a skillet until golden brown.

Assemble the Sloppy Joes: Spoon a generous amount of the Cajun chicken mixture onto the bottom half of each toasted bun.

Garnish and Serve: Top with chopped fresh parsley or green onions. Place the top half of the bun over the filling and enjoy your delicious Cajun Chicken Sloppy Joes!
