Ingredients
  

For the Chocolate Cake:

1 ¾ cups all-purpose flour

1 ¾ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ tsp baking powder

1 ½ tsp baking soda

1 tsp salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 tsp vanilla extract

1 cup boiling water

For the Raspberry Bliss Filling:

1 cup fresh raspberries (plus extra for garnish)

½ cup granulated sugar

2 tbsp lemon juice

1 tbsp cornstarch

2 tbsp water

For the Chocolate Ganache:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

1 tsp vanilla extract

For Decoration:

Fresh mint leaves

Optional: powdered sugar for dusting

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Prepare the Chocolate Cake Batter:

      - In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.

        - Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes until the batter is smooth.

          - Carefully stir in the boiling water (the batter will be thin).

            Bake the Cakes:

              - Pour the batter evenly into the prepared cake pans.

                - Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

                  - Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

                    Make the Raspberry Bliss Filling:

                      - In a small saucepan, combine the fresh raspberries, granulated sugar, lemon juice, cornstarch, and water.

                        - Cook over medium heat, stirring gently, until the mixture comes to a boil and thickens (about 5 minutes).

                          - Remove from heat and let it cool completely.

                            Prepare the Chocolate Ganache:

                              - In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat.

                                - Add the chopped chocolate and vanilla extract, stirring until the chocolate is melted and the mixture is smooth. Let it cool slightly.

                                  Assemble the Cake:

                                    - Place one layer of the chocolate cake on a serving platter. Spread a layer of the raspberry filling over the cake layer.

                                      - Place the second cake layer on top. Pour the chocolate ganache over the top, allowing it to drip down the sides.

                                        Garnish:

                                          - Decorate the top with fresh raspberries and mint leaves. Optionally, dust with powdered sugar for a touch of elegance.

                                            Serve:
