Ingredients

1 cup Medjool dates, pitted and finely chopped

3/4 cup almond flour

1/2 cup unsweetened cocoa powder

1/4 teaspoon sea salt

1/2 teaspoon baking soda

1/3 cup dark chocolate chips (dairy-free if desired)

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

2 large eggs

1/4 cup chopped nuts (walnuts or pecans), optional

1/4 cup coconut sugar or maple syrup (optional, for extra sweetness)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

Prepare the Date Mixture: In a small bowl, combine the chopped Medjool dates with a splash of warm water, letting them soak for about 10 minutes to soften.

Mix Dry Ingredients: In a large mixing bowl, whisk together the almond flour, cocoa powder, sea salt, and baking soda until well combined.

Blend the Wet Ingredients: In a separate bowl, blend the soaked dates (including the soaking water), melted coconut oil, vanilla extract, and eggs until smooth with an immersion blender or in a food processor.

Combine Wet and Dry: Pour the date mixture into the bowl with the dry ingredients. Stir gently until the mixture is just combined; avoid overmixing.

Fold in Chocolate Chips and Nuts: Gently fold in the dark chocolate chips and chopped nuts, if using. This will add crunch and extra flavor to your brownies.

Pour into Pan: Spread the batter evenly in the prepared baking dish. You can sprinkle a few extra chocolate chips on top for decoration if desired.

Bake: Place the dish in the oven and bake for about 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter).

Cool and Serve: Allow the brownies to cool in the pan for about 10 minutes, then use the parchment overhang to lift them out. Let them cool completely on a wire rack before cutting into squares.

Enjoy!: Serve these delectable brownies as a healthy snack or dessert. They'll be a hit with family and friends!
