1 cup dark chocolate chips (70% cacao or higher)

½ cup almond butter (smooth or crunchy based on preference)

2 tablespoons coconut oil

2 tablespoons maple syrup or honey (optional for sweetness)

½ teaspoon sea salt

½ teaspoon vanilla extract

Mini cupcake liners or silicone molds

Instructions
 

Melt the Chocolate: In a double boiler or microwave, melt the dark chocolate chips with 1 tablespoon of coconut oil. If using a microwave, heat in 30-second intervals, stirring in between until smooth.

    Prepare the Molds: Place mini cupcake liners in a muffin tin or silicone molds. This will help you easily pop out the almond butter cups once they are set.

      First Layer of Chocolate: Spoon about 1 tablespoon of the melted dark chocolate into each liner, ensuring the bottom is covered completely. Use the back of a spoon to spread it up the sides slightly. Place the tray in the refrigerator to harden for about 15 minutes.

        Make the Almond Butter Filling: In a small bowl, mix the almond butter with the remaining coconut oil, maple syrup (if using), sea salt, and vanilla extract until well combined and smooth.

          Add the Filling: Once the first layer of chocolate is set, remove the tray from the refrigerator. Spoon about 1 tablespoon of the almond butter mixture into each chocolate-coated liner, ensuring to leave some space at the top.

            Top with Chocolate: Pour another tablespoon of the melted dark chocolate over the almond butter filling to cover it completely. Gently tap the tray on the counter to level the chocolate.

              Refrigerate: Return the tray to the refrigerator and chill for an additional 30 minutes or until the chocolate is fully set.

                Serve: Once set, carefully remove the almond butter cups from the liners. Store in an airtight container in the refrigerator for up to two weeks (if they last that long!).
