Ingredients

2 cups all-purpose flour

1 teaspoon instant yeast

1 teaspoon salt

1 teaspoon sugar

3/4 cup warm water (around 110°F or 43°C)

2 tablespoons olive oil (plus extra for brushing)

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

Freshly cracked black pepper, to taste

Pinch of red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Dough: In a large mixing bowl, combine the flour, instant yeast, salt, and sugar. Gradually add the warm water and 2 tablespoons of olive oil. Mix until a shaggy dough forms.

Knead the Dough: Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until it’s smooth and elastic. Form into a ball and place it in a greased bowl, cover with a kitchen towel, and let it rise for about 30 minutes in a warm place.

Preheat Oven: Preheat your oven to 475°F (245°C) while the dough rises. If you have a pizza stone or baking steel, place it in the oven to heat up as well.

Prepare Garlic Oil: In a small saucepan, heat 2 tablespoons of olive oil over low heat. Add the minced garlic and let it infuse for about 2-3 minutes until fragrant (do not let it brown). Remove from heat and set aside.

Shape the Flatbreads: Once the dough has risen, punch it down and divide it into two equal parts. Roll each piece on a floured surface into a rough oval or rectangle about 1/4 inch thick.

Add Toppings: Place the shaped flatbreads on parchment paper. Brush each flatbread generously with the garlic oil, sprinkle with grated Parmesan cheese, chopped rosemary, cracked black pepper, and red pepper flakes if using.

Bake the Flatbreads: Carefully transfer the flatbreads (with parchment) onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes or until the edges are golden and crispy.

Garnish & Serve: Remove the flatbreads from the oven. Sprinkle with additional Parmesan and fresh parsley for a pop of color. Cut into slices and serve warm as an appetizer or side dish.
