1 can (15 oz) of chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

4 small whole wheat tortillas or taco wraps

1 cup shredded lettuce (iceberg or romaine)

1/2 cup diced tomatoes

1/2 cup corn (fresh, canned, or frozen)

1/4 cup diced red onion

1 avocado, sliced

Fresh cilantro, chopped

Lime wedges for serving

Your favorite salsa or hot sauce (optional)

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Prepare Chickpeas: In a medium bowl, combine the drained chickpeas, olive oil, smoked paprika, ground cumin, garlic powder, onion powder, cayenne pepper (if using), and salt and pepper. Toss well to coat the chickpeas evenly with the seasoning.

      Roast Chickpeas: Spread the seasoned chickpeas onto a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until they are golden-brown and crunchy. Shake the pan halfway through to ensure even cooking.

        Warm Tortillas: While the chickpeas are roasting, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable. Alternatively, you can microwave them for about 15 seconds to soften.

          Assemble Wraps: Once the chickpeas are done roasting, remove them from the oven and let them cool slightly. To assemble each wrap, lay down a tortilla and add a generous handful of shredded lettuce, followed by diced tomatoes, corn, red onion, a handful of the crunchy chickpeas, and avocado slices.
