Crockpot Spaghetti Chili Bake

1 pound ground beef (or turkey/vegetarian substitute)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes, with juice

1 can (8 oz) tomato sauce

1 can (12 oz) chili beans in gravy

1 medium onion, diced

3 cloves garlic, minced

2 cups uncooked spaghetti (break into thirds)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar, mozzarella, or your choice)

Fresh parsley or cilantro, for garnish

Optional: sour cream for serving

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat and transfer the meat to the crockpot.

    Combine Ingredients: Add the kidney beans, black beans, diced tomatoes, tomato sauce, chili beans, onion, garlic, chili powder, cumin, paprika, and season with salt and pepper to the crockpot. Mix everything together until well-combined.

      Add Spaghetti: Gently fold in the uncooked spaghetti pieces into the chili mixture, making sure they are submerged.

        Cook: Cover the crockpot and set it on low for 4-6 hours or high for 2-3 hours, until spaghetti is tender and cooked through.

          Add Cheese: About 15 minutes before serving, sprinkle the shredded cheese on top. Re-cover and let the cheese melt.

            Serve: Once cooked, give the chili bake a gentle stir and serve hot. Garnish with fresh parsley or cilantro and a dollop of sour cream if desired.
