1 large eggplant, diced into 1-inch cubes

2 medium zucchinis, sliced

1 large red bell pepper, diced

1 large yellow onion, diced

4 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1/4 cup olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon thyme

Salt and pepper to taste

Fresh basil leaves for garnish

Prepare the Vegetables: Start by washing and dicing the eggplant, zucchinis, and bell pepper. Chop the onion and mince the garlic as well. Place all these chopped vegetables into a large mixing bowl.

    Mix the Base: In a separate bowl, combine the crushed tomatoes, olive oil, balsamic vinegar, dried basil, dried oregano, thyme, salt, and pepper. Stir well to create a flavorful sauce.

      Layer in the Crockpot: Add half of the vegetable mixture to the bottom of the crockpot. Pour half of the tomato sauce over it. Add the remaining vegetables on top, followed by the rest of the sauce. This layering helps the flavors meld beautifully as they cook.

        Cook: Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours. The longer cooking time will yield a richer flavor and perfectly tender vegetables.
