Crockpot Creamy Chicken Chili

2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, diced

4 cloves garlic, minced

1 cup chicken broth

1 packet (1 oz) taco seasoning

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 cup cream cheese, cubed

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

1 avocado, diced (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the slow cooker.

    Layer Other Ingredients: Add the black beans, kidney beans, corn, diced tomatoes, diced onion, and minced garlic on top of the chicken.

      Add Seasoning: Sprinkle the taco seasoning, ground cumin, smoked paprika, and black pepper evenly over the layered ingredients. Pour in the chicken broth to ensure everything is moistened.

        Cook: Cover the slow cooker and set it to low heat. Cook for 6-8 hours or on high heat for 4 hours, until the chicken is cooked through and tender.

          Shred the Chicken: Once cooked, carefully remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken back to the pot.
