1 pound ground beef or turkey

1 can (15 oz) chili beans, undrained

1 can (15 oz) diced tomatoes, with juices

1 cup onion, diced

1 cup bell pepper, diced (any color)

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

2 cups shredded cheddar cheese

1 cup sour cream (for serving)

Chopped green onions and fresh cilantro (for garnish)

Prepare the Potatoes: Start by washing and peeling the russet potatoes. Dice them into small, even cubes to ensure even cooking. Set aside.

    Cook the Meat: In a skillet over medium heat, brown the ground beef or turkey. Cook until no longer pink, breaking it apart with a spatula. Drain any excess grease, then add the minced garlic, diced onion, and bell pepper. Sauté until the vegetables are softened, about 5 minutes.

      Combine Ingredients: In your crockpot, add the diced potatoes, the sautéed meat mixture, chili beans, diced tomatoes (with their juices), chili powder, cumin, smoked paprika, salt, and pepper. Stir everything until well combined.

        Add Liquid (Optional): If you like a soupier chili, you can add ½ - 1 cup of beef or vegetable broth to the mixture. This helps the potatoes cook evenly and adds extra flavor.

          Cook in the Crockpot: Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours. Stir occasionally if possible, to prevent sticking.

            Finish with Cheese: Once the potatoes are tender, and the chili is hot, sprinkle the shredded cheddar cheese over the top. Cover for an additional 15 minutes until the cheese is melted.
