Crockpot Cheese Tortellini and Sausage

1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

2 cups marinara sauce

1 cup chicken or vegetable broth

1 package (9 ounces) cheese tortellini (fresh or frozen)

1 cup heavy cream

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup fresh spinach, chopped

1 cup shredded mozzarella cheese

Fresh basil, chopped for garnish (optional)

Instructions
 

Brown the Sausage: In a skillet over medium heat, crumble the Italian sausage and cook until browned. Add the diced onion and garlic, cooking until the onion becomes translucent. Drain any excess fat, then transfer the mixture to your crockpot.

    Combine Ingredients: Add the marinara sauce, chicken or vegetable broth, Italian seasoning, and red pepper flakes to the crockpot. Stir well to combine.

      Cook: Cover the crockpot and cook on low for about 5-6 hours, or on high for 2-3 hours.

        Add Tortellini: About 30 minutes before serving, stir in the cheese tortellini. If using fresh tortellini, it might only need about 15 minutes to cook.

          Incorporate Cream & Spinach: Once the tortellini is tender, reduce the heat to low and stir in the heavy cream and chopped spinach. Allow the spinach to wilt for about 5 minutes.

            Finish with Cheese: Stir in the shredded mozzarella cheese, mixing until melted and combined. Season with salt and pepper to taste.
