2 medium zucchinis, thinly sliced

1 cup breadcrumbs (Panko for extra crispiness)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon paprika

Salt and pepper, to taste

2 large eggs

1 tablespoon Dijon mustard

Olive oil spray (or enough for brushing)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and dry the zucchinis. Slice them into thin rounds (about 1/4 inch thick). The thinner they are, the crispier they'll get!

      Make the Coating: In a large bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, paprika, salt, and pepper. Mix thoroughly.

        Prepare the Egg Mixture: In another bowl, whisk together the eggs and Dijon mustard until well blended.

          Coat the Zucchini: Dip each zucchini slice into the egg mixture first, ensuring it's completely coated, and then dredge it in the breadcrumb mixture, pressing down lightly to help the coating stick.

            Arrange on Baking Sheet: Place the coated zucchini slices in a single layer on the prepared baking sheet. If desired, lightly spray or brush the tops with olive oil spray for extra crispness.

              Bake: Bake in the preheated oven for 20-25 minutes, flipping the zucchini halfway through, until they are golden brown and crispy.
