Crispy Potsticker Salad with Zesty Sesame Dressing

12 store-bought or homemade potstickers

4 cups mixed greens (arugula, spinach, and romaine)

1 cup shredded carrots

1/2 cup cherry tomatoes, halved

1/2 cup sliced cucumbers

1/4 cup chopped green onions

1/4 cup chopped cilantro

1/4 cup crushed peanuts (optional)

For the Zesty Sesame Dressing:

1/4 cup sesame oil

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon grated fresh ginger

1 garlic clove, minced

1 teaspoon chili paste (adjust to taste)

1 tablespoon sesame seeds

Instructions
 

Cook the Potstickers: In a large skillet over medium heat, add a tablespoon of oil and arrange the potstickers in a single layer. Cook for about 2-3 minutes until the bottoms are crispy. Add a splash of water (about 1/4 cup) to the skillet and cover with a lid to steam for another 3-5 minutes. Remove the lid and let any remaining water evaporate, allowing the potstickers to crisp up for an additional minute. Once golden brown, transfer them to a plate.

    Prepare the Zesty Sesame Dressing: In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, grated ginger, minced garlic, and chili paste until well combined. Stir in sesame seeds. Taste and adjust seasoning as necessary.
