4 cloves garlic, minced

2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)

1 teaspoon smoked paprika

1 teaspoon sea salt

1/2 teaspoon black pepper

Cook for about 10 minutes until just fork-tender but not fully cooked. Drain the potatoes and allow them to steam dry for a few minutes.

      Mix Ingredients: While the potatoes are steaming, in a large mixing bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, smoked paprika, sea salt, and black pepper. Whisk together until well combined.
