1.5 pounds baby potatoes (Yukon Gold or red potatoes)

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 teaspoon dried oregano

1/2 teaspoon paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon freshly ground black pepper

1 tablespoon olive oil

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Boil the Potatoes: In a large pot, add the baby potatoes and cover with cold water. Add a pinch of salt and bring to a boil over high heat. Once boiling, reduce the heat to medium and cook until the potatoes are just tender, about 15-20 minutes. You should be able to easily pierce them with a fork, but they should not be falling apart.

      Drain and Let Cool: Drain the potatoes and set them aside to cool for about 5 minutes. This helps them firm up a bit and makes them easier to handle.

        Smash the Potatoes: Using a flat surface (like a cutting board), take a potato and gently press it down with the palm of your hand or the bottom of a cup until it smashes to about ½ inch thick. Repeat with all the potatoes.

          Prepare Garlic Butter: In a small saucepan over medium heat, melt the butter and olive oil together. Add the minced garlic and cook until fragrant, about 1-2 minutes, stirring frequently to prevent the garlic from burning.

            Season the Potatoes: In a large bowl, combine the smashed potatoes, garlic butter, parsley, oregano, paprika, salt, and pepper. Toss gently until the potatoes are well coated with the mixture.

              Arrange on Baking Sheet: Spread the coated potatoes out in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure they get crispy.
