1 large eggplant, sliced into 1/2-inch thick rounds

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

2 cups marinara sauce (for serving)

Fresh basil leaves (for garnish, optional)

Olive oil spray (for baking)

Instructions
 

Prepare the Eggplant:

    - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

      - Lay the eggplant rounds on a clean towel and sprinkle both sides with salt. Let them sit for about 30 minutes to draw out excess moisture and bitterness. Rinse off the salt and pat them dry with a paper towel.

        Set Up the Breading Station:

          - In a shallow bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.

            Coat the Eggplant:

              - Dredge each eggplant round in flour, shaking off the excess. Dip it into the beaten eggs, allowing the excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere.
