Crispy Chicken Fajita Pasta Cups

8 oz elbow macaroni or fusilli pasta

2 cups cooked chicken breast, shredded

1 tablespoon olive oil

1 small onion, thinly sliced

1 bell pepper (red or green), thinly sliced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or a Mexican blend)

1/2 cup sour cream

1/4 cup fresh cilantro, chopped (for garnish)

12 wonton wrappers

Instructions
 

Prep the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or a little olive oil.

    Cook the Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper, cooking until they are soft and slightly charred, about 5-7 minutes.

        Mix Chicken and Spices: Add the shredded chicken to the skillet along with the cumin, chili powder, smoked paprika, salt, and pepper. Stir well to combine and heat through for about 3 minutes. Remove from heat.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, the chicken and vegetable mixture, and half of the shredded cheese. Mix until everything is well coated.

            Prepare Wonton Wrappers: Place one wonton wrapper into each muffin cup, gently pressing down to form a cup shape. Fill each wonton cup with the pasta mixture, packing it in slightly.

              Top with Cheese: Sprinkle the remaining shredded cheese evenly over the filled pasta cups.

                Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the wonton wrappers are golden and crispy, and the cheese is melted and bubbly.

                  Serve: Remove from the oven and let cool for a few minutes. Carefully lift the cups out of the muffin tin. Serve warm with a dollop of sour cream on top and garnished with fresh cilantro.
