1 cup all-purpose flour (or chickpea flour for gluten-free option)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

½ tsp cayenne pepper (adjust for heat preference)

1 tsp salt

½ tsp black pepper

1 cup sparkling water (or regular water for a denser texture)

1 cup panko breadcrumbs

½ cup grated Parmesan cheese (optional for extra flavor)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Olive oil (for frying or drizzling)

Instructions
 

Prepare the Cauliflower: Rinse and thoroughly dry the cauliflower florets. This helps the batter stick better and ensures they become crispy.

    Make the Batter: In a large bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Gradually add the sparkling water until the batter is smooth and has a consistency similar to pancake batter.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it's well coated. Let the excess batter drip off.

        Mix Breadcrumbs and Cheese: In a separate bowl, combine the panko breadcrumbs and grated Parmesan cheese. Toss well to combine.

          Bread the Cauliflower: Roll each batter-coated floret in the breadcrumb mixture until fully covered. Press down lightly to ensure the breadcrumbs adhere.

            Fry or Bake the Cauliflower:

              - For frying: Heat about ½ inch of olive oil in a large skillet over medium heat. Once hot, add the cauliflower florets in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
