1 cup whole wheat flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup unsweetened almond milk (or any non-dairy milk)

1 cup breadcrumbs (panko for extra crunch)

½ cup buffalo sauce (adjust spice level to taste)

2 tablespoons olive oil

1 tablespoon dried parsley (optional, for garnish)

Ranch dressing (for serving, optional)

Preheat the Oven: Begin by preheating your oven to 450°F (230°C). Line a baking sheet with parchment paper for easy clean-up and to prevent sticking.

    Prepare the Cauliflower: In a large mixing bowl, combine the whole wheat flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk together until well mixed.

      Make the Batter: Gradually add the almond milk to the dry ingredients while whisking continuously until you achieve a smooth batter. It should be thick enough to coat the cauliflower but not too runny.

        Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off. Then, roll the battered florets into the breadcrumbs, ensuring they are evenly coated.

          Arrange on Baking Sheet: Place the coated cauliflower bites on the prepared baking sheet in a single layer, making sure they aren’t touching each other. This will help them get crispy.
