Crispy Buffalo Chicken Wraps – Perfect for Lunch!

1 pound boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ cup hot sauce (like Frank's RedHot or your favorite)

2 tablespoons unsalted butter, melted

4 large tortillas (flour or spinach)

1 cup romaine lettuce, shredded

1 cup cherry tomatoes, halved

½ cup blue cheese crumbles or ranch dressing

Optional: sliced pickles for an extra crunch

Instructions
 

Prepare Chicken: Preheat your oven to 400°F (200°C). Pat the chicken breasts dry and cut them into strips. Season with salt and pepper.

    Set Up Breading Station: In three separate bowls, place the flour mixed with garlic powder, onion powder, paprika, and salt in the first bowl. In the second bowl, pour in the beaten eggs. In the third bowl, add the breadcrumbs.

      Coat Chicken Strips: Dredge each chicken strip first in the flour mixture, then dip into the eggs, and finally coat with breadcrumbs. Make sure each strip is evenly coated.

        Bake Chicken: Place the coated chicken strips on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, flipping halfway through.

          Prepare Buffalo Sauce: While the chicken is baking, mix the hot sauce and melted butter in a small bowl. Once the chicken is cooked, toss it in the Buffalo sauce until well coated.

            Assemble Wraps: Lay each tortilla flat and add a generous amount of shredded lettuce, followed by the Buffalo chicken strips. Top with halved cherry tomatoes, blue cheese crumbles or ranch dressing, and optional pickles.

              Wrap It Up: Fold in the sides of the tortilla and then roll it from the bottom up to create a secure wrap.
