Crispy Baked Avocado Tacos – A Game-Changer!

2 ripe avocados, halved and pit removed

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon cumin

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup shredded lettuce (for serving)

1 cup diced tomatoes (for serving)

½ cup crumbled feta or cotija cheese (optional, for serving)

Fresh lime wedges (for serving)

Fresh cilantro (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Avocados: Scoop out the flesh from the avocado halves, leaving a thin layer of avocado on the skin to maintain its shape. Reserve the avocado flesh for another use or mash it for topping later.

      Breading Station: Set up a breading station with three shallow bowls. In the first bowl, place the flour combined with salt and pepper. In the second bowl, beat the eggs together. In the third bowl, mix the breadcrumbs with garlic powder, paprika, cumin, and a pinch of salt.

        Coat the Avocado: Take each avocado half and dip it first into the flour, shaking off any excess. Next, dip it into the beaten eggs, and finally, coat it thoroughly in the breadcrumb mixture. Place the breaded avocado halves cut-side up on the prepared baking sheet.
