Crispy Baked Avocado Fries

2 ripe avocados

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

Cooking spray or olive oil, for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Avocados: Cut each avocado in half, remove the pit, and scoop out the flesh. Cut the avocado halves into wedges (about 6 wedges per half).

      Set Up the Breading Stations: In three separate bowls, prepare your dredging stations:

        - Flour Bowl: Place the all-purpose flour in the first bowl and season with a pinch of salt and pepper.

          - Egg Wash Bowl: Beat the eggs in the second bowl until well combined.

            - Breadcrumb Bowl: In the third bowl, combine the panko breadcrumbs, garlic powder, onion powder, smoked paprika, cayenne pepper, and a pinch of salt and pepper.

              Bread the Avocado Wedges: Dip each avocado wedge first into the flour, coating it completely. Shake off any excess flour, then dip into the egg wash, allowing the excess to drip off. Finally, coat the wedge in the seasoned panko breadcrumbs, pressing gently to ensure the breadcrumbs adhere well.

                Arrange on Baking Sheet: Once all wedges are coated, place them on the prepared baking sheet in a single layer. Make sure to leave some space between each wedge.

                  Add Cooking Spray: Lightly spray or drizzle the avocado fries with cooking spray or olive oil to help them crisp up during baking.

                    Bake: Bake in the preheated oven for 15-20 minutes or until the avocado fries are golden brown and crispy. You may want to flip them halfway through for even crisping.
