Crispy Air Fryer Eggplant Fries

1 medium eggplant

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional for heat)

Cooking spray or olive oil spray

Instructions
 

Prepare the Eggplant:

    Slice the eggplant into fries, about 1/4-inch thick. If desired, sprinkle them lightly with salt and let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry with a paper towel.

      Set Up Breading Stations:

        In three separate shallow bowls, place the following:

          - Bowl 1: Flour seasoned with salt and black pepper.

            - Bowl 2: Whisk the eggs until smooth.

              - Bowl 3: Panko breadcrumbs mixed with garlic powder, onion powder, smoked paprika, and cayenne pepper.

                Coat the Eggplant Fries:

                  Working with a few pieces at a time, dip each eggplant fry into the flour, shaking off any excess. Then, dip it into the egg mixture, allowing the excess to drip off. Finally, coat the fry in the seasoned panko breadcrumbs, pressing gently to ensure the coating adheres well.

                    Preheat the Air Fryer:

                      Preheat your air fryer to 400°F (200°C) for about 5 minutes while you finish coating the eggplant fries.

                        Air Fry the Fries:

                          Lightly spray the air fryer basket with cooking spray. Arrange the breaded eggplant fries in a single layer in the basket. Ensure they don’t overlap for even cooking. Spray the tops lightly with cooking spray as well.

                            Cook:

                              Air fry the eggplant fries for 12-15 minutes, flipping them halfway through. Keep an eye on them to ensure they turn golden brown and become crispy. Adjust cooking time based on your air fryer's performance.

                                Serve:
