Marinate the Chicken: In a medium bowl, combine the chicken pieces with buttermilk, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using). Mix well to ensure the chicken is fully coated. Cover and let marinate in the refrigerator for at least 1 hour (or overnight for best results).
