Crescent Cheesecake Bars

2 cans (8 oz each) refrigerated crescent dough

16 oz (2 packages) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 tablespoon lemon juice

1/2 teaspoon lemon zest (optional)

1/4 teaspoon salt

1 cup berry topping (blueberries, strawberries, or cherries, optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Prepare the Crescent Dough: Unroll one can of crescent dough and press it into the bottom of the prepared baking dish, making sure to seal any seams.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth. Gradually add the granulated sugar and continue to beat until creamy.

        Add Flavorings: Add the vanilla extract, lemon juice, lemon zest (if using), and salt to the cream cheese mixture. Beat until combined.

          Incorporate Eggs: Add the eggs one at a time, mixing on low speed just until incorporated. Be careful not to overmix.

            Spread the Filling: Pour the cheesecake filling over the pressed crescent dough in the baking dish, spreading it evenly with a spatula.

              Top with Second Layer of Dough: Unroll the second can of crescent dough and carefully layer it over the cheesecake filling. Seal any edges by gently pressing the dough down.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the filling is set.

                  Cool and Set: Remove from the oven and allow the bars to cool in the baking dish for at least 30 minutes. After cooling, refrigerate for at least 2 hours to firm up.

                    Serve: Once chilled, lift the bars out using the parchment overhang. Cut into squares and, if desired, top with berry topping and a dusting of powdered sugar before serving.
