12 oz (340g) pasta of your choice (spaghetti or penne work well)

2 medium zucchinis, diced into half-moons

2 cups cherry tomatoes, halved

1 cup heavy cream (or a dairy-free alternative)

3 cloves garlic, minced

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set the pasta aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the diced zucchinis and cook for 5-7 minutes, or until they begin to soften.

      Add Tomatoes: Stir in the cherry tomatoes and cook for another 5 minutes, allowing them to burst and release their juices. Season with salt, pepper, dried basil, and dried oregano for added flavor.

        Create the Creamy Sauce: Lower the heat and pour in the heavy cream. Stir well to combine with the vegetable mixture. Bring the mixture to a gentle simmer, allowing it to thicken slightly (about 3-4 minutes).
