2 large chicken breasts, butterflied

4 oz cream cheese, softened

1/2 cup spinach, chopped (fresh or frozen, well-drained)

1/4 cup sun-dried tomatoes, chopped

1/4 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper to taste

1 cup marinara sauce

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish

Prepare the Chicken: Preheat your oven to 375°F (190°C). Take the butterflied chicken breasts and gently pound them between two pieces of plastic wrap to an even thickness, about 1/2 inch.

    Make the Filling: In a mixing bowl, combine the softened cream cheese, chopped spinach, sun-dried tomatoes, grated Parmesan, garlic powder, Italian seasoning, and a sprinkle of salt and pepper. Mix until well combined.

      Assemble the Roll-Ups: Place a generous spoonful of the cream cheese filling onto each flattened chicken breast. Carefully roll the chicken up from one end, securing it tightly and placing the seam side down. Repeat with all chicken breasts.

        Prepare for Baking: In a baking dish, spread half of the marinara sauce evenly on the bottom. Place the chicken roll-ups seam side down in the dish, then top with the remaining marinara sauce. Sprinkle the shredded mozzarella cheese over the top.

          Bake the Chicken: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After that, remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.

            Garnish and Serve: Once baked, let the chicken rest for 5 minutes before serving. Garnish with fresh basil leaves and an extra sprinkle of Parmesan cheese if desired. Serve warm with a side salad or garlic bread.
