Creamy Tomato Orzo

1 cup orzo pasta

2 tablespoons olive oil

1 small onion, finely chopped

4 cloves garlic, minced

1 can (14 oz) crushed tomatoes

2 cups vegetable broth

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon sugar

Salt and pepper to taste

1 cup fresh spinach, chopped

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Cook the Orzo: In a medium pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.

      Add Tomatoes & Broth: Pour in the crushed tomatoes and vegetable broth. Stir to combine, then add the dried oregano, sugar, salt, and pepper. Allow the mixture to simmer for about 10 minutes, letting the flavors meld.

        Stir in Cream: Reduce the heat to low and slowly whisk in the heavy cream, stirring until the sauce is creamy and smooth. Let the sauce simmer for another 5 minutes.

          Combine Orzo & Spinach: Add the drained orzo and chopped spinach to the skillet. Stir well to combine and heat through until the spinach wilts, approximately 2-3 minutes.

            Finish with Cheese: Remove the skillet from heat and stir in the grated Parmesan cheese until melted and fully incorporated. Adjust seasoning with additional salt and pepper as needed.
