Gnocchi, a staple in Italian cuisine, has a rich history that dates back centuries. The word "gnocchi" is derived from the Italian word "nocca," meaning knuckle, which is a nod to the shape of the dumplings. Traditionally, gnocchi were made from a combination of flour and water, but over time, potato gnocchi became the most popular version.

Ingredients

1 lb (450 g) potato gnocchi

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14 oz or 400 g) crushed tomatoes

1 cup heavy cream

1 teaspoon dried basil or 1/4 cup fresh basil, chopped

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper to taste

1/2 cup grated Parmesan cheese, plus extra for serving

Fresh basil leaves for garnish

Instructions

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top (about 2-3 minutes). Drain and set aside.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 5 minutes, until translucent. Add the minced garlic and cook for an additional minute until fragrant.

Create the Sauce: Stir in the crushed tomatoes, heavy cream, dried basil (or fresh if using), and sugar if desired. Bring the mixture to a low simmer, stirring occasionally. Allow it to cook for about 5-7 minutes, letting the flavors meld together.

Combine Gnocchi with Sauce: Add the cooked gnocchi to the skillet and gently fold them into the creamy sauce. Cook for another 3-4 minutes until the gnocchi are heated through and well coated with the sauce.

Add Cheese: Stir in 1/2 cup of grated Parmesan cheese, mixing until it's melted and incorporated into the sauce. Season with salt and pepper to taste.

Serve: Divide the creamy gnocchi among plates, garnish with fresh basil leaves, and sprinkle extra Parmesan cheese on top. Serve warm.
