Ingredients

1 lb store-bought potato gnocchi

2 cups fresh corn kernels (approximately 4 ears of corn)

1 tablespoon olive oil

2 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Optional: 1/4 cup fresh basil, chopped (for garnish)

Optional: Extra Parmesan for serving

Instructions

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the top (about 2-3 minutes). Drain and set aside.

Sauté the Corn: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Then, add the fresh corn kernels and cook for approximately 5-7 minutes until they begin to caramelize slightly and soften.

Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine. Allow it to simmer gently for about 3-4 minutes, until the cream is warmed through.

Combine Gnocchi and Sauce: Add the cooked gnocchi to the skillet, followed by the grated Parmesan cheese and thyme. Stir gently to combine all ingredients, allowing the gnocchi to absorb the creamy sauce for about 2-3 minutes.

Season and Serve: Taste and season with salt and pepper as needed. If desired, garnish with fresh basil and extra Parmesan cheese before serving.

Enjoy: Serve immediately while hot and creamy, and enjoy the flavors of summer!
