Creamy Spring Pea Risotto

1 ½ cups Arborio rice

4 cups vegetable or chicken broth

1 cup fresh or frozen peas

1 small onion, finely chopped

3 cloves garlic, minced

½ cup dry white wine (optional)

½ cup Parmesan cheese, grated

1 cup heavy cream

2 tablespoons olive oil

2 tablespoons unsalted butter

Salt and pepper to taste

Fresh mint or basil leaves for garnish (optional)

Instructions
 

Prepare the Broth: In a saucepan, heat the broth over low heat. Keep it warm but not boiling.

    Sauté Aromatics: In a large heavy-bottomed pot, heat olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Toast the Rice: Add the Arborio rice to the pot and stir to coat the grains with the oil and butter. Toast the rice for about 2-3 minutes until the edges become slightly translucent.

        Deglaze with Wine: If using, pour in the white wine and stir continuously until it has mostly evaporated.

          Add Broth Gradually: Start adding the warm broth one ladle at a time, stirring frequently. Allow the mixture to absorb the broth before adding more. Continue this process for about 18-20 minutes, until the rice is creamy and al dente.

            Stir in Peas and Cream: In the last 5 minutes of cooking, add the peas and stir in the heavy cream. Cook until the peas are tender and the risotto is creamy.

              Finish with Cheese and Butter: Remove the pot from heat and stir in the remaining tablespoon of butter and the grated Parmesan cheese. Season with salt and pepper to taste.
