Creamy Spinach Tortellini Bake

12 oz. fresh or frozen tortellini (cheese or spinach-filled)

2 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup heavy cream

2 cloves garlic, minced

1 teaspoon dried oregano

½ teaspoon crushed red pepper flakes (adjust to taste)

Salt and pepper to taste

1 tablespoon olive oil

½ cup cherry tomatoes, halved (for garnish)

Fresh basil leaves, for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

      Sauté the Spinach: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chopped spinach (if using fresh), and cook for 2-3 minutes until wilted. If using frozen spinach, make sure it is heated through. Season with salt, pepper, oregano, and crushed red pepper flakes.

        Make the Creamy Sauce: In the same skillet, reduce the heat to low and stir in the ricotta cheese, heavy cream, half of the mozzarella cheese, and half of the Parmesan cheese. Mix until well combined and creamy. Adjust seasoning if needed.

          Combine Tortellini and Sauce: Gently fold in the cooked tortellini and sautéed spinach into the creamy mixture until everything is well coated.

            Transfer to Baking Dish: Pour the tortellini mixture into a greased 9x13-inch baking dish. Spread it out evenly.

              Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese over the top.

                Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and lightly golden.
