Creamy Spinach Artichoke Quesadillas

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

4 large flour tortillas

2 tbsp olive oil (for frying)

Optional: Fresh cilantro, chopped (for garnish)

Instructions
 

Prepare the Filling: In a medium mixing bowl, combine the cream cheese and sour cream. Mix until smooth. Add in the chopped spinach, artichoke hearts, mozzarella, Parmesan, garlic powder, onion powder, and season with salt and pepper to taste. Stir until all ingredients are well incorporated.

    Assemble the Quesadillas: Place a tortilla on a flat surface. Spread a generous amount of the creamy spinach and artichoke filling on one half of the tortilla. Fold the other half over to create a half-moon shape. Repeat this step with the remaining tortillas and filling.

      Cook the Quesadillas: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Carefully place one or two quesadillas in the skillet, depending on the size of your pan. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining oil and quesadillas.

        Serve: Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges and garnish with fresh cilantro if desired. Serve warm with salsa or guacamole on the side.
