Creamy Spinach and Mushroom Pasta

8 oz (225 g) pasta of your choice (fettuccine or penne works great)

2 tbsp olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225 g) mushrooms, sliced (cremini or button)

4 cups fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 tsp nutmeg (freshly grated if possible)

Salt and pepper to taste

Crushed red pepper flakes (optional, for a kick)

Fresh parsley or basil, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

      Add the Mushrooms: Toss the sliced mushrooms into the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and their moisture is evaporated.

        Incorporate the Spinach: Add the chopped spinach to the skillet. Stir until wilted, about 2-3 minutes. Season with salt and pepper to taste.

          Make it Creamy: Pour in the heavy cream and sprinkle in the grated Parmesan cheese. Stir well until the cheese melts and the sauce thickens. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is achieved.
