12 oz cheese tortellini (fresh or frozen)

1 lb boneless, skinless chicken breasts, diced

1 cup sun-dried tomatoes, chopped (in oil for extra flavor)

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1 cup baby spinach

3 cloves garlic, minced

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil for garnish (optional)

Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to the package instructions. Drain and set aside.

    Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Season the diced chicken with salt and pepper, then add it to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly golden. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Sun-Dried Tomatoes: In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for about 2-3 minutes, until the garlic is fragrant.
