4 ripe peaches, pitted and chopped

1 cup coconut milk

1 cup vegetable broth

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon fresh ginger, grated

1 tablespoon honey (optional, adjust based on sweetness of peaches)

Juice of 1 lime

Salt and pepper to taste

Fresh basil or mint leaves for garnish

Sauté Aromatics: In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

    Cook Peaches: Add the chopped peaches, grated ginger, and honey (if using) to the saucepan. Stir everything together and cook for another 5-7 minutes, allowing the peaches to soften and release their juices.

      Add Liquids: Pour in the coconut milk and vegetable broth. Bring the mixture to a gentle simmer and cook for about 10 minutes until everything is well combined and heated through.

        Blend the Soup: Remove the saucepan from heat. Using an immersion blender, blend the soup until it reaches a smooth and creamy consistency. If you don’t have an immersion blender, transfer the mixture to a regular blender in batches, being careful with the hot liquid.

          Season and Serve: Stir in the lime juice and season with salt and pepper to taste. If the soup is too thick, feel free to add a little more vegetable broth until you reach your desired consistency.
