1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsweetened cocoa powder (for chocolate layer)

1 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

1 cup milk

3 large eggs

1 tsp vanilla extract

½ cup strawberry puree (for strawberry layer)

Red food coloring (optional, for added color)

For the Creamy Filling:

1 cup heavy whipping cream

½ cup mascarpone cheese

½ cup powdered sugar

1 tsp vanilla extract

2 tbsp milk (to thin, if needed)

For the Toppings:

Fresh strawberries, halved

Chocolate shavings

Whipped cream (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

    Prepare the Chocolate Layer: In a bowl, whisk together 1 cup flour, ½ cup cocoa powder, baking powder, baking soda, and salt. In another bowl, beat together ½ cup butter and granulated sugar until light and fluffy. Add 3 eggs, 1 tsp vanilla extract, and mix well. Gradually add the dry mixture, alternating with 1 cup milk. Pour the batter into one of the prepared pans.

      Prepare the Vanilla Layer: Repeat the process but do not add cocoa powder. Use only the plain flour and follow the same steps for mixing. Pour into the second prepared pan.

        Prepare the Strawberry Layer: In a bowl, repeat the same method as above, substituting half the milk for ½ cup of strawberry puree to give the batter a light pink tint. Optionally, add red food coloring for enhanced brightness. Pour the batter into the last prepared pan.

          Bake the Layers: Bake all layers in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

            Make the Creamy Filling: In a mixing bowl, whip the heavy cream until soft peaks form. In another bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Gently fold the whipped cream into the mascarpone mixture until well incorporated.

              Assemble the Cake: Place the chocolate layer on a cake stand or plate. Spread a generous layer of the creamy filling on top. Place the vanilla layer on top of the filling, repeating the process with more filling. Finally, place the strawberry layer on top.

                Decorate the Cake: Use the remaining creamy filling to frost the top and sides of the cake. Decorate with fresh strawberries on top and sprinkle chocolate shavings around the sides for an elegant finish.
