Ingredients

4 medium zucchinis, spiralized (zoodles)

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

8 ounces cremini mushrooms, thinly sliced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Crushed red pepper flakes (optional, for heat)

Instructions

Prepare Zoodles: Begin by spiralizing the zucchinis to create zoodles. Set them aside in a colander to drain excess moisture while you prepare the sauce.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until softened. Add the minced garlic and cook for another 1-2 minutes until fragrant.

Cook the Mushrooms: Add the sliced cremini mushrooms to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture.

Create the Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Allow the sauce to simmer gently for about 5 minutes, stirring frequently until it thickens.

Add Zoodles: Once the sauce has thickened, add the zoodles directly to the skillet. Gently toss to combine them with the creamy mushroom sauce, cooking for an additional 2-3 minutes until the zoodles are just tender but still crisp.

Serve: Remove from heat. Garnish the zoodle bowls with freshly chopped parsley and a sprinkle of crushed red pepper flakes if desired. Serve warm.
