Ingredients

12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

3 tbsp olive oil

4 cloves garlic, minced

1/4 tsp red pepper flakes (adjust for spice preference)

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 cups fresh spinach

Salt and pepper, to taste

1/4 cup fresh basil, chopped (for garnish)

1 tbsp lemon juice (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Sauté the Shrimp: In a large skillet over medium heat, heat the olive oil. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Season with salt, pepper, and red pepper flakes. Remove the shrimp from the skillet and set aside.

Create the Cream Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Stir in the chicken broth and bring to a simmer. Next, add in the heavy cream and Parmesan cheese, stirring continuously until the cheese is melted and the sauce thickens (about 3-5 minutes).

Combine Ingredients: Add the halved cherry tomatoes and fresh spinach to the sauce. Cook for an additional 2-3 minutes until the spinach wilts. Return the cooked shrimp to the skillet.

Toss with Pasta: Add the drained pasta to the skillet, tossing gently to combine with the creamy sauce. If the sauce is too thick, add a little reserved pasta water to achieve your desired consistency. Drizzle with lemon juice if desired, and season with additional salt and pepper to taste.

Serve: Plate the creamy shrimp pasta and garnish with fresh basil. Enjoy your delicious meal that might just make someone propose!
