8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup pepper jack cheese, shredded

4 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1 cup heavy cream

2-3 fresh jalapeños, diced (seeds removed for less heat)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/2 cup breadcrumbs (optional, for topping)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Roux: In a large saucepan, melt the butter over medium heat. Once melted, sprinkle in the flour, whisking constantly for about 2 minutes until it forms a thick paste (roux) and turns a light golden brown.

      Add Dairy: Gradually whisk in the whole milk and heavy cream, ensuring there are no lumps. Continue whisking until the mixture begins to thicken, typically about 5–7 minutes.

        Cheesy Goodness: Lower the heat and slowly add in the sharp cheddar and pepper jack cheeses, stirring continuously until completely melted and smooth.

          Spice It Up: Stir in the diced jalapeños, garlic powder, onion powder, smoked paprika, salt, and black pepper, blending everything evenly into the cheese sauce.

            Combine & Coat: Add the cooked macaroni to the cheese sauce, stirring until all the pasta is well coated in the creamy mixture.

              Prepare for Baking (optional): If you prefer a baked version with a crispy top, preheat your oven to 350°F (175°C). Pour the mac & cheese into a greased baking dish. If desired, sprinkle breadcrumbs evenly over the top for added crunch.
