8 oz elbow macaroni

2 tbsp unsalted butter

2 tbsp all-purpose flour

2 cups whole milk

1 cup sharp cheddar cheese, grated

1 cup Monterey Jack cheese, grated

1/2 cup cream cheese, softened

2-3 fresh jalapeños, finely chopped (adjust based on spice preference)

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and black pepper to taste

1/2 cup panko breadcrumbs

2 tbsp olive oil

Fresh cilantro or parsley, chopped (for garnish)

Instructions
 

Cook the Elbow Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Roux: In the same pot, melt the butter over medium heat. Once melted, sprinkle in the flour and whisk to form a roux. Cook for about 2 minutes until the mixture is slightly golden.

      Create the Cheese Sauce: Gradually add the whole milk, whisking continuously to avoid lumps. Bring the mixture to a simmer and let it thicken for about 3-5 minutes.

        Add the Cheeses: Reduce heat to low, then stir in the sharp cheddar, Monterey Jack, and cream cheese until fully melted and smooth. If the sauce is too thick, add a bit more milk.

          Spice it Up: Stir in the finely chopped jalapeños, garlic powder, onion powder, salt, and black pepper to taste. Adjust the level of jalapeños based on how spicy you want your mac and cheese.

            Combine the Pasta and Sauce: Add the cooked macaroni back into the cheese sauce. Stir until all the pasta is well coated.
