Ingredients

1 pound potato gnocchi

2 tablespoons olive oil

4 cloves garlic, minced

8 ounces fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh basil, for garnish

Instructions

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface, about 2-3 minutes. Drain and set aside.

Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

Add Spinach: Toss in the chopped spinach and cook until wilted, about 2-3 minutes.

Make the Sauce: Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese until it melts and the sauce becomes creamy. Season with salt, pepper, and red pepper flakes if using.

Combine Gnocchi and Sauce: Add the cooked gnocchi to the skillet and gently toss to coat them in the creamy sauce. Allow everything to heat through for another 2 minutes.

Serve: Divide the creamy garlic spinach gnocchi into bowls and garnish with fresh basil. Enjoy your delicious meal!
