Creamy Garlic Parmesan Chicken Pasta

12 oz fettuccine or pasta of choice

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

Salt and pepper to taste

1 teaspoon Italian seasoning

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup freshly grated Parmesan cheese

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Additional grated Parmesan (for serving)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set it aside.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken. Season with salt, pepper, and Italian seasoning. Sauté for about 6-8 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

      Prepare the Garlic Cream Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Make sure to stir continuously to avoid burning.

        Create the Sauce Base: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer.

          Add Cheese & Lemon: Gradually whisk in the grated Parmesan cheese until melted and the sauce is smooth. Stir in the lemon juice, and season with more salt and pepper if needed. If the sauce is too thick, gradually add reserved pasta water until desired consistency is achieved.

            Combine Pasta and Chicken: Add the drained pasta and cooked chicken back into the skillet, tossing everything until well coated in the creamy sauce.

              Serve: Garnish with chopped fresh parsley and additional grated Parmesan. Serve immediately while warm.
