2 pounds Yukon Gold potatoes, peeled and quartered

4 cloves garlic, peeled

1 cup heavy cream

4 tablespoons unsalted butter

Fresh chives or parsley, finely chopped (for garnish)

Boil the Potatoes and Garlic: In a large pot, place the quartered potatoes and the garlic cloves. Fill with enough water to cover them by about an inch. Add a generous pinch of salt and bring to a boil over medium-high heat. Once boiling, lower the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.

    Drain and Steam Dry: Once cooked, drain the potatoes and garlic in a colander, then return them to the pot. Cover with a kitchen towel and let them steam for about 5 minutes to remove excess moisture.

      Warm the Cream and Butter: In a small saucepan, combine the heavy cream and butter. Warm over low heat, stirring frequently until the butter has melted and the mixture is slightly heated.
