1 lb large shrimp, peeled and deveined

3 tbsp unsalted butter, divided

4 cloves garlic, minced

1/2 cup heavy cream

1/2 cup chicken broth

1 cup cherry tomatoes, halved

1 cup fresh spinach

1/2 tsp smoked paprika

1/2 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of 1/2 lemon

Cooked pasta or rice (for serving, optional)

Instructions
 

Prepare the Shrimp: Season the peeled and deveined shrimp with smoked paprika, Italian seasoning, salt, and pepper. Set aside.

    Sauté the Shrimp: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once melted, add the shrimp and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Sauté the Garlic: In the same skillet, add the remaining tablespoon of butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

        Make the Sauce: Pour in the chicken broth and bring to a simmer. Then add the heavy cream and stir well to combine. Allow the sauce to simmer for 3-4 minutes until it thickens slightly.

          Combine Ingredients: Add the cherry tomatoes, spinach, lemon zest, and lemon juice to the skillet. Cook for 2-3 minutes until the spinach wilts and the tomatoes start to soften.

            Reintroduce the Shrimp: Return the cooked shrimp to the skillet. Stir everything gently to combine and heat the shrimp through for another 1-2 minutes. Adjust seasoning with salt and pepper as needed.
